Feel like eating scrambled eggs, but you’re on this detox? Or maybe you’re a vegan. Here is the answer! I made a tofu scramble by first sauteing veggies in olive oil. I drained about 1/2 pack of tofu and then added it to the sauteed veggies and mashed up the tofu with a fork to resemble scrambled eggs. Add whatever seasonings you like and voila! I had Mexican food last night so I used those veggies since they were already chopped up. Enjoy!
